Lucuma

I suppose most of you have never heard of lucuma before, like with a lot of these new superfoods of the raw food section I would like to introduce you to step by step. Lucuma is also known as "The gold of the Incas".

Ok, you still wonder what it is in the end. The Lucuma we get over here in Europe is a powder made of a nutrient dense fruit from Peru which looks like a mango and has a yellowy-orange fruit pulp. Its tree is both long lived and evergreen. You can only get the powder here because of a ban on importing the whole fruit out of South America. The lucuma fruit is also one of the lost crops of the Incas. The Peruvian culture is steeped in traditions rich in fine foods and cultural culinary delights. The Lucuma name has been honored both spiritually and culinary since ancient times. Today, this fruit is still prominent in contemporary celebrations and commonly used in ice-cream, which is Peru´s favourite flavor.

It wouldn´t be a superfood if it didn´t provide a variety of nutritions, would it? Lucuma is an excellent source of carbohydrates, fibre, vitamins and minerals. It has lots of beta-carotene, niacin (B3) and iron. Per 1oog Lucuma powder you will find 329 kcal, 9.3g water, 1.4g proteins, 2.3 g fibre, 2.4g lipids, 2.3g ash, 92mg calcium, 186mg phosphorus, 0.2mg thiamine, 11mg ascobic acid and 0,3mg riboflavin. Additionally, Lucuma provides various types of sugar: 8.4g glucose, 4.7g fructose, 1.7g sucrose and 0.06g inostol.

Lucuma powder has a divine maple-like smell and has got a rich & creamy texture. If you blend silken tofu together with some yacon syrup, vanilla and lucuma, it will result as a delicious creamy dessert cream. It also blends easily and well with ice-creams, baby food, soya yogurts, pies, cakes, cookies, smoothies, chocolate bars and desserts of all other kinds. Add about 1-2 teaspoons of Lucuma per portion. Oh, it even tastes nice as a sweetener in coffee ;-)

Mesquite, not mosquito!

Part for part I´m discovering more of these so-called Superfoods. At the Festival of Life I also came across Mesquite and have added it so smoothies or even into my coffee together with Maca since then. A lot of people have never heard of this stuff, therefore I´d like to inform you a bit about it. Mesquite is similar to carob a pod. It is a traditional Native American food and produced by gathering ripened seed-pods from the mesquite tree which are grinded into a fine powder. Desert dwellers used it as a staple food for centuries. It is a high protein meal with 16g protein per 100g which is also full of vitamins and minerals. Per 100g mesquite meal you´ll have 3.7 mg barium, 3.2 mg boron, 520 mg calcium, 0.12 mg chromium, 0.03 mg cobalt, 0.8 mg copper, 18 mg Iron, 140 mg magnesium, 2.3 mg manganese, 0.05 mg Molybdenum, 215 mg phosphorus, 1712 mg potassium, 12 mg sodium, 222 mg sulfur and 3.0 mg zinc. Moreover it has 36 g of fibre.

Researchers found mesquite highly effective in balancing blood sugar. The natural sweetness in the pods comes from fructose, which doesn't require insulin to be metabolised . The high rate of dietary fibre, pods are 25% fibre, causes the nutrients in mesquite to be absorbed slowly preventing the spikes and valleys in blood sugar. Mesquite requires a longer time to digest then many grains with its low glycemic index of 25. The digestive time for mesquite is to 4 to 6 hours unlike wheat that digests in 1 to 2 hours. It results as a food that maintains a constant blood sugar for a sustained time and as a result prevents hunger. It supports the diabetic's diet, too, and helps maintain a healthy insulin system.

So much to the nutritional facts. You might wonder what it tastes like and how to use it the best. Mesquite has a sweet, rich, molasses-like flavor with a hint of caramel which blends well into smoothies or other drinks, especially in combination with cacao/carob or maca. You can also add a teaspoon of it into your desserts, or even when you are baking or prepare an icing. It is recommended to take not more than 1-2 teaspoons per person.

Yacon

I looooove Yacon since the first time I tried it! Therefore I have to share it with you. I like to enjoy it either plain as dried slices or even in the form of sirup as a sweetener. Alrighty, I suppose you haven´t heard anything about it so far.

Yacon is a distant relative of the sunflower with edible tubers and leaves, a Peruvian root vegetable, which grows commonly in the northwest of Argentina, in Colombia. Over there the tuber is often chopped and added to salads, or ise also consumed boiled or baked. Although Yacon is packed with sweetness, the sugar in yacon is mainly fructooligosaccharide, which cannot be absorbed by the body. That means yacon is both naturally low-calorie and low in mono and disaccharides (less than 1 g per serving, sugars that rapidly elevate blood sugar levels); it is even suitable for diabetics. Yacon roots contain important quantities of potassium and antioxidants. The naturally contained oligofructose also promotes beneficial bacteria in the colon, because it acts as a prebiotic by stimulating a positive colon function which helps the digestion. Yacon root also boots the immune system due to the fact that it helps absorption of calcium and vitamins.

Yacon slices taste similar to dried apples. Add it to your dessert or smoothie or use the sirup as you would maple syrup on foods and in recipes or sweeten beverages with a spoonful. The golden colour of the sirup does look pretty good when used in porridge or biscuits, it is the most healthy sweetener I´ve come across so far.

|*VeganMoFo*| #13: Maca-me, Maca-u, Maca is my new motor!

When I was at the "Festival of Life" I learnt that Maca is one of the "superfoods" and good for pretty all your body´s needs. But what the hell is Maca?

Maca is a root vegetable related to the potato family which grows in Peru and Bolivia. From the roots you can produce a flour - that is what we get over here, the maca powder. It smells and tastes a bit caramel-vanilla like and can be added to anything like I learnt, e.g. smoothies, sweets,

Maca has the fantastic nutritional benefits of being high in its concentration of proteins and vital nutrients. It is rich in essential minerals (especially selenium, calcium, magnesium and iron), contains almost all vitamins, fatty acids such as linolenic acid, palmitic acid and oleic acids as well as polysaccahrides and 19 amino acids. Moreover, maca has a positive effect on the physical efficiency (e.g. chronic fatigue decreases enhancing overall energy), immune system and psychological maximum stress (e.g. depressions). It has a similar effect like ginseng and is like aloe vera an adaptogen. So it supports the body wherever it is nedded without harmful side effects. Even the Incas knew of its benefits and used to eat it before battles. It has also aphrodisiac properties, which was not the point for me to go and get some. Really!

I´ve been astonished when I realized how beneficial maca is. I really am feeling better since I´ve been adding it to several things like my Good Morning shake or to treats. I know it is not that cheap, but think about it: how much do you really need of it? Your package will last some time with using 1-2 teaspoons every day or every second day. And it will certainly be better for you than any other supplements which might be even more expensive!
